Chili sin Carne

Ingredients

  • 400g smoked tofu / vegan bacon
  • 2 tbsp olive oil
  • 2 tbsp smoked paprika
  • salt and pepper
  • 2 red bell peppers
  • 4 cans of beans (ideally with sauce)
  • 1 can of corn
  • 1 cup of vegetable broth
  • 500g of tomato sauce

Instruction

  1. Preheat the oven to 180°C.
  2. Crumble the tofu into small pieces and mix in olive oil and spices (smoked paprika, salt, pepper).
  3. Spread the tofu on a baking sheet and bake for 20 minutes.
  4. Chop the bell peppers and fry them in a pot.
  5. Add the beans, corn, vegetable broth, and tomato sauce.
  6. Let it simmer for 20 minutes.
  7. Add the tofu and let it simmer for another 5 minutes.
  8. Serve and enjoy!
