Ingredients
- 350g basmati rice
- 1 package of vegan chicken (or tofu)
- 1 zucchini
- 1 red bell pepper
- 100g green beans
- (1 cup of green peas / edamame)
- cashews for garnish
Sauce
- 4 tbsp ajvar
- 2 tbsp sesame oil
- 1 tsp lemon grass
- 1 tsp garlic powder
- 5 tbsp soy sauce
- 1 tsp sriracha
- 2 tbsp sweetener of choice (maple or agave syrup)
Instruction
- Cook the rice according to the instructions on the package.
- Fry the vegan chicken in a pan with a little bit of oil. Set aside.
- Fry the vegetables in a pan with a little bit of oil. Set aside.
- Mix all the ingredients for the sauce in a bowl.
- Drain the rice and add it in a large pan.
- Pour the sauce into the rice and mix well.
- Add the vegetables and vegan chicken and mix again.
- Serve with cashews.
