Nasi Goreng

Ingredients

  • 350g basmati rice
  • 1 package of vegan chicken (or tofu)
  • 1 zucchini
  • 1 red bell pepper
  • 100g green beans
  • (1 cup of green peas / edamame)
  • cashews for garnish

Sauce

  • 4 tbsp ajvar
  • 2 tbsp sesame oil
  • 1 tsp lemon grass
  • 1 tsp garlic powder
  • 5 tbsp soy sauce
  • 1 tsp sriracha
  • 2 tbsp sweetener of choice (maple or agave syrup)

Instruction

  • Cook the rice according to the instructions on the package.
  • Fry the vegan chicken in a pan with a little bit of oil. Set aside.
  • Fry the vegetables in a pan with a little bit of oil. Set aside.
  • Mix all the ingredients for the sauce in a bowl.
  • Drain the rice and add it in a large pan.
  • Pour the sauce into the rice and mix well.
  • Add the vegetables and vegan chicken and mix again.
  • Serve with cashews.
