Pasta e Fagioli

Ingredients

  • ½ onion
  • 2 cans of beans
  • rosemary
  • 3 cups of vegetable broth
  • 2 tbsp tomato paste or tomato sauce
  • salt and pepper
  • 250g pasta

Instruction

  1. Chop the onion and fry it in a pot together with rosemary.
  2. Add the beans and let it simmer for a couple of minutes.
  3. Add the vegetable broth and tomato paste.
  4. Use the hand mixer to blend half of the sauce in the pot.
  5. Add salt and pepper to taste.
  6. Add the pasta in the pot, add the lid and let it simmer.
  7. Stir occasionally and add more water if needed.
